WHAT
IBCA Four Meat Sanctioned Contest
Chicken, Spare Ribs, Pork Shoulder or Butt, and Beef Brisket
IBCA Sanctioned. With 15 Teams competing, it will be a California State Championship with the Grand Champion going to the Kansas City Royal Invitational and being entered into the State Draw for the Jack Daniels Invitational in Tennessee.

This event qualifies for ToY and RoY points

Sat AM and walk through Sat Afternoon during Taste primary concerns
Hand wash Station
Three sinks for wash Parks and Rec will provide
Fly Free Prep and Serve
Foods stored 6 inches off ground
Raw foods iced Cooked foods HOT 140
Serve from hot Chaffing Pans
Fire Marshall
Fire Extinguisher required by FD Hose down side style
Smokers 10 feet from EZUP or RV
Taste of Championship BBQ replaces Peoples Choice
2 oz samples start at 2 pm NOT BEFORE
If a team starts before 2pm they will not be paid any winnings from the contest
No PC competition
2oz Samples will be in the same type tubs that were used at Stagecoach Cook Off
All proceeds from the $2.00 Taste of Championship BBQ goes to the team
After paying a $50 CASH to your ever faithful contest organizer on Friday
I will write a check to the Hesperia Parks and Recreations charity of choice.

This Cook Off Features Taste of Championship BBQ
Teams can sell their BBQ in 2oz samples for $2.00
Must pay $50 CASH to be collected by organizer Friday
Team Sites
We will be positioned down both sides of a new street
The Public will be in the middle of the street
Parking Cones and Caution Tape will keep the Public out of your Cook Area
Average spaces will be whatever length you need with a 20 foot width
Slide outs can go over the curb making those sites 25 feet wide
