Henry are there any rules on the dessert entries other than open plate and garnish? Cooked in smoker, or on site, etc?

Cooked on-site... otherwise, no rules...details will be on the team packets, sent to you in about 2 weeks.

Henry - I saw on the Wiki page that this comp also has prize money for Beef Ribs. Can you explain a little more on this: turn-in time, are beef ribs provided, who is judging, etc.

Last year Smitty they paid just like a regular category..this year I think it's just top 3..KCBS judged and you provide the meat..they were turned in after brisket

Matt pretty much nailed it... only about 1/2 of the teams entered the Beef Rib category last yr, so the BOD (Rotary) thought it wasn't right to give more money (equal but only 1/2 teams) to a none KCBS meat category than to a KCBS meat category... It was still decided to give equal amount to 1st 2nd and 3rd as to the KCBS Meats... and added a 6th category in Dessert with equal money to 1st, 2nd and 3rd as to KCBS 4 meats... in hope that more of the teams get involved... Both will be judged by KCBS CBJ's and turn ins as Matt said will be 45 minutes after Brisket for Beef Ribs and 30 minutes after Beef Ribs for Dessert....

I have a judge that wants to cook with a team (to satisfy his Master Judge requirement) at this contest. If you would like the help of an additional person please PM me with your contact info and I will pass this along to him. This is a great opportunity for one person teams that could use an extra hand or a runner.

Henry, What are the ticket cost and breakdowns for PC? Are you going to be doing separate tickets and payouts for Ribs?

Yes--- we are doing $2 per tasting... 50/50 split with teams..... and 3 ribs for $10 (different color tickets) with $2 to teams and $1.33 to Rotary.....
