I have an opportunity to provide dessert items at a winery during their Champagne and dessert spa event. For the life of me I can't think of anything appropriate for this event. I can just see myself at a table with other caterers who are giving samples of chocolate, and cute decorated yummies and all I can think of is Pig Candy. Can you imagine giving out pig candy to ladies sipping champagne, eating petifores and having their nails done??
I think I will pass on this PR event unless I can come up with something else. Any help out there?

We see quite a few quality deserts at the Eggfest, something as simple as grilled fruit with a sweet and hot effect with the use of chili powder.
Be careful to not use a heavy smoke with the sweets, not a good time for a robust mesquite fire if you know what I mean. You could bake a simple pound cake on the smoker and serve with grilled peaches and ice cream...I'd take that against their "foo foo" chocolate dishes anyday.

I just got the promo for this Champagne and dessert event!!!!
Massage, Nail Art, Pedicures, Facials, Waxing, Hair, Skin Care, Desserts & More
Although I would love to show off my BBQ in hopes of getting a catering job or two I don't think this is the event that will showcase what I do best. I might reconsider if John Chips comes and helps out. I would be interested in seeing the reaction he gets when he tries to get the ladies to try his 'sticky pickle'.

Hey Bill,
Too bad I didn't see this earlier. Sparkling wine is really versatile, it pairs with a lot of different foods well. I'm thinking grilled pears, maybe some foo-foo goat cheese-based filling, and maybe even as a grilled fruit tart (see this for one example) . Ask Ryan Pang, he actually knows this stuff for real.

On a wild chase, I googled "grilled pears and goat cheese" and found this from Tyler Florence - it even includes bacon!
Roasted Baby Pears with Herbed Goat Cheese
Now I might have to try this :-) It's possible it's too savory for dessert proper, but hey, it's pears.
