I made up this little Pulled Pork FAQ. It Egg based so subtract 30 degs from any of the cooking temps. However there is a 'How Much' formula there.

We do gigs For 150 people all the time. We purchase 75 lbs of Boneless Butts from Costco and there is always plenty left over, even after everyone has 1 - 2 sandwiches. We have only come close to running out once, but there were over 200 people that showed up that time.
